When I started growing I only had a small concrete back garden and then after a while a small allotment. I used to grow things very close together to maximise on space and I would interplant all my crops. It meant that I had to harvest many things when they were still quite small.

I noticed the intense flavour in these tiny vegetables and how beautiful they looked served on a plate. When chefs started visiting my plot to buy microgreens they would also discover the baby vegetables that I was growing. As they couldn’t find these products anywhere else I started supplying them to order.
